Ingredients:
- 250g beef, thinly sliced
- 3 cups cooked jasmine rice, cooled
- 1 cup mixed vegetables (peas, carrots, corn), thawed if frozen
- 2 cloves garlic, minced
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon white pepper
- 2 tablespoons vegetable oil
- Green onions, chopped (for garnish)
- Salt, to taste
Instructions:
- Heat a wok or large skillet over high heat. Add 1 tablespoon of vegetable oil and swirl to coat the pan.
- Add the thinly sliced beef and stir-fry until it’s no longer pink. Remove the beef from the wok and set aside.
- In the same wok, add the remaining tablespoon of vegetable oil. Add minced garlic and sauté for about 30 seconds until fragrant.
- Push the garlic to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until they are almost fully cooked.
- Add the mixed vegetables to the wok and stir-fry for a few minutes until they are heated through.
- Add the cooked rice to the wok and break up any clumps with a spatula. Stir-fry the rice with the vegetables and eggs for a few minutes.
- Add the cooked beef back to the wok. Drizzle soy sauce, oyster sauce, and sesame oil over the rice. Sprinkle white pepper and a pinch of salt. Stir-fry to combine all the ingredients.
- Taste and adjust seasoning if needed. You can add more soy sauce or salt according to your preference.
- Once everything is well combined and heated through, remove the wok from the heat.
- Transfer the beef fried rice to serving plates. Garnish with chopped green onions for a fresh flavor and vibrant color.
