Ingredients:
- 200g pho noodles
- 200g tofu
- 100g shiitake mushrooms
- 100g carrots
- 50g onions
- 20g ginger
- 3 garlic cloves
- 1 egg (optional)
- 1.5 liters of vegetable broth
- Cooking oil, sugar, soy sauce, fish sauce, spices (pepper, salt, seasoning powder)
Instructions:
Step 1: Prepare the ingredients
- Cut the tofu into small pieces
- Peel and slice the carrots into thin strips
- Cut the onions into small pieces
- Chop the ginger and garlic
- Slice the shiitake mushrooms thinly
Step 2: Make the broth
- Pour the vegetable broth into a pot and bring it to a boil.
- Add the ginger, garlic, and onions to the pot and season with spices to taste.
Step 3: Saute the vegetables and tofu
- In a frying pan, heat up some cooking oil and saute the tofu until golden brown.
- Add the shiitake mushrooms and carrots to the pan and stir-fry with the tofu.
- Season with soy sauce, sugar, fish sauce, and spices to taste.
Step 4: Cook the pho noodles
- Boil the pho noodles in a pot of water for about 3-5 minutes until they are cooked.
- After the noodles are cooked, remove them from the pot and rinse them with cold water.
Step 5: Serve and enjoy
- Put the pho noodles in a bowl and mix them with the sauteed vegetables and tofu.p
- Sprinkle some pepper on top and pour in the vegetable broth.
- Add a boiled egg (optional) on top for an extra protein boost.
- Your vegetarian pho is now ready to be enjoyed!
